1 cup shortening or butter (softened)<br />
1/2 cup peanut butter <br />
3/4 cup brown sugar<br />
3/4 cup sugar<br />
2 eggs <br />
1 teaspoon vanilla <br />
1 1/2 - 1 3/4 cups whole wheat flour (I've found I need the higher flour amount)<br />
1 teaspoon baking soda <br />
1/2 teaspoon salt<br />
1-2 tablespoons ground flaxseed (optional)<br />
2 cups oats (rolled or quick oats) <br />
1 1/2 cups chocolate chips (optional)<br />
<br />
Preheat oven to 375 degrees. Cream together first six ingredients. Add flour, baking soda, salt and oats. Mix well. Stir in chocolate chips. Roll into 1-1 1/2-inch balls. Place on greased cookie sheets and bake for 10 minutes or until done. 1 cup sugar <br />
1 teaspoon vanilla extract <br />
1/4 cup cocoa powder <br />
Pinch salt <br />
1 tablespoon red food coloring <br />
1 teaspoon vinegar <br />
2 eggs <br />
3/4 cup all-purpose flour <br />
1/4 cup chopped toasted walnuts (optional)<br />

Cream Cheese Layer:<br />

8 ounces cream cheese, softened <br />
1/2 cup powdered sugar<br />
1 egg <br />
1/8 teaspoon vanilla extract <br />

Preheat oven to 350<br />

Grease an 8 by 8-inch baking pan <br />
<br />
Brownie layer: In a saucepan on medium heat melt the butter. Remove the butter to a large bowl and add the sugar, vanilla, cocoa powder, salt, food coloring, and vinegar, in that order, mixing between additions. Whisk the eggs in a small bowl and stir it into the cocoa mix. Fold in the flour until lightly combined. Stir in the walnuts and pour the batter into the prepared baking pan, saving 1/4 cup of the batter for the top.<br />

Cream cheese layer: Blend together the cream cheese, sugar, egg, and vanilla in a medium bowl. Gently spread the cream cheese layer on top of the brownie batter in the pan. Dollop the remaining brownie batter over the cream cheese layer. Using a skewer or the tip of a knife, drag the tip through the cream cheese mixture to create a swirl pattern. <br />
Bake the brownies for 30 minutes. Remove to a cooling rack and allow them to cool completely before cutting. <br />

</div> <strong>Macaroni Grill Bread</strong><br />
<br />
1 1/2 t active dry yeast<br />
1 C warm water<br />
3 T olive oil<br />
1/4 t sugar<br />
2 1/2 C flour<br />
1 1/2 t salt<br />
1/4 t Italian Seasoning<br />
1/4 t cracked black pepper<br />
3/4 T rosemary (best with fresh, but dried works too)<br />
1/4 t Garlic Powder<br />
<br />
Mix dough up (mix for around 7 minutes) and let rise for 40 minutes. <br />
Form into 2 small loaves, whisk up an egg and spread the egg wash over the <br />
loaves. <br />
Turn your oven on to 170 and place the loaves in oven for 15 minutes, and then raise the temperature to 370 and cook for 20 minutes or until golden brown.<br />
Brush melted butter or olive oil over the top, and sprinkle salt.<br />

Seems like everyone has a different recipe for all our favorite foods that she would make. Good olive oil <br />
1 1/2 teaspoons kosher salt <br />
1/2 teaspoon freshly ground black pepper<br />
2 teaspoons grated lemon zest <br />
2 tablespoons freshly squeezed lemon juice <br />
3 tablespoons pine nuts, toasted <br />
1/3 cup freshly grated Parmesan cheese <br />
2 tablespoons julienned fresh basil leaves (about 12 leaves) <br />

Directions<br />
<br />
Preheat the oven to 425 degrees F.<br />
<br />
Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.<br />
Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.<br />

Well A. that got me thinking about needing to eat a brownie, and B. I realized I hadn't made brownies for some time so I started looking around for a recipe too. </div><div class="separator" style="clear: both; text-align: center;">I'm a big fan of Alton Brown, I used to love his cooking show on the Food Network and I'm sad to say that I haven't watched it for quite awhile (like atleast 1-2 years). Sometimes he likes to over complicate things for me, but whatever, so I checked to see if he had a brownie recipe and then made them. This is hands down my favorite brownie recipe and I love that it's simple and traditional.</div><div class="separator" style="clear: both; text-align: center;"><br />

4 large eggs <br />
1 cup sugar, sifted <br />
1 cup brown sugar, sifted <br />
8 ounces melted butter <br />
11/4 cups cocoa, sifted <br />
2 teaspoons vanilla extract <br />
1/2 cup flour, sifted <br />
1/2 teaspoon kosher salt <br />

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan. <br />

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.<br />
<br />
Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.<br />

I've been on the hunt for quite some time for the perfect mock recipe and I think I've found it with the <a href="http://www.ourbestbites.com/2009/03/creamy-lime-cilantro-dressing.html">Our Best Bites</a> dressing recipe. I like to make up my own Cafe Rio salad to use this dressing or I just add a little bit to my <a href="http://cookingwithnutty.blogspot.com/2009/09/salsa-lazy-way.html">homemade salsa</a> and go to town with chips. 1 pack (1oz) Hidden Valley Ranch Dressing Mix<br />
1 C mayo<br />
1/2 C milk<br />
1 lime<br />
2 cloves garlic, roughly chopped<br />
1/2 C roughly chopped cilantro (sometimes I use more) ☺<br />
1/4 C green salsa (They recommend La Costena brand and that's what I use)<br />
hot sauce<br />

Place milk, mayo, and ranch mix in a blender. 2 T of lime juice. Toss in the garlic, cilantro and green salsa. Blend it up. Sample it and add hot sauce to taste. Make it several hours ahead of time to allow it to thicken.<br />

In a small saucepan, whisk flour into milk and heat, stirring constantly, until it thickens. Remove from heat and let it cool to room temperature. Stir in vanilla.<br />

While the mixture is cooling, cream the butter and sugar together until light and fluffy. Then add the cooled milk/flour/vanilla mixture and beat until it all combines and resembles whipped cream.<br />

30 fudge mint cookies, crushed (about 1 3/4 cups) <br />
<br />
2 tablespoons butter or margarine, melted <br />
<br />
<strong>Filling </strong><br />

3 packages (8 oz each) cream cheese, softened <br />
<br />
1 cup sugar <br />
<br />
4 eggs <br />
<br />
2 teaspoons mint extract<br />
<br />
1/4 cup semi-sweet chocolate chips<br />
<br />
green food coloring<br />
<br />
In a small bowl, combine cookie crumbs and butter. Press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. <br />

In a large bowl, beat the cream cheese, sugar and until smooth. Add eggs; beat on low speed just until combined. Stir in the extract and food coloring if desired. Fold in chocolate chips. Pour into crust. Place pan on a baking sheet <br />
<br />
Bake at 325° for 50-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Refrigerate leftovers. <br />

6 skinless chicken thighs (1 1/2 lb) (I just used chicken breasts)<br />
1 large onion, chopped (1 cup) <br />
2 cloves garlic, finely chopped <br />
1 3/4 cups chicken broth <br />
1 teaspoon ground cumin <br />
1 teaspoon dried oregano<br />
1/2 teaspoon salt <br />
1/4 teaspoon red pepper sauce (I use tabasco)<br />
2 cans (15 to 16 oz each) great northern beans, drained, rinsed <br />
1 can (11 oz) white shoepeg corn, drained (or frozen)<br />
3 tablespoons lime juice <br />
2 tablespoons chopped fresh cilantro <br />

1. Combine everything but the lime juice and cilantro in the crockpot<br />
2. Cook on high for 4-6 hours, or low for 8-10<br />
3. Shred the chicken and add the lime juice and cilantro<br />

</div><div class="separator" style="clear: both; text-align: left;">1 large head Cauliflower, cut into florets</div><div class="separator" style="clear: both; text-align: left;">1 large Onion, sliced</div><div class="separator" style="clear: both; text-align: left;">2 cloves garlic, minced</div><div class="separator" style="clear: both; text-align: left;">2 Tablespoons Olive Oil</div><div class="separator" style="clear: both; text-align: left;">15 oz Chicken Broth</div><div class="separator" style="clear: both; text-align: left;">1 cup Water</div><div class="separator" style="clear: both; text-align: left;">1 Bay leaf</div><div class="separator" style="clear: both; text-align: left;">1 tsp Thyme</div><div class="separator" style="clear: both; text-align: left;">1 cup Milk</div><div class="separator" style="clear: both; text-align: left;">Salt </div><div class="separator" style="clear: both; text-align: left;">Pepper</div><div class="separator" style="clear: both; text-align: left;">Red Pepper, ground (optional)</div><div class="separator" style="clear: both; text-align: left;">Parmesan Cheese (optional)</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">Toss cauliflower, onions, garlic, and olive oil together, spread on cooking sheet and roast at 400 for 30 minutes. Stirring halfway through.</div><div class="separator" style="clear: both; text-align: left;">In a saucepan, combine cauliflower mixture, broth, 1 cup water, bay leaf, and thyme and bring to a boil. Turn down heat and simmer for 20 minutes. Throw away bay leaf and puree soup with a processor (I used the immersion blender), return to pan, stir in milk, salt and pepper and cook until warm through. </div><div class="separator" style="clear: both; text-align: left;"><br />

</div><div class="separator" style="clear: both; text-align: left;">1-1/4 pounds boneless skinless chicken breasts</div>1 cup chopped onion<br />
1 teaspoon minced garlic<br />
2 cans (14-1/2 ounces each) chicken broth <span style="color: blue;">(or make your own)</span><br />
1 can (28 ounces) crushed tomatoes<br />
1 can (16 ounces) kidney beans, rinsed and drained<br />
1 can (8 ounces) tomato sauce<br />
1 can (6 ounces) tomato paste<br />
1 can (4 ounces) chopped green chilies<br />
2 teaspoons chili powder<br />
1 teaspoon ground cumin<br />
3/4 teaspoon dried oregano<br />
1/2 teaspoon sugar<br />
1/4 teaspoon salt<br />
1/4 teaspoon pepper<br />

3 corn tortillas (6 inches), cut into 1/2-inch strips <span style="background-color: white; color: blue;">(I don't like corn tortillas so I used my favorite) ☺</span><br />

Broil chicken 3-4 in. from the heat for 5-6 minutes on each side or until juices run clear. <span style="color: blue;">(Or cheat and use rotisserie chicken like I did)</span><br />
In a Dutch oven coated with cooking spray <span style="color: blue;">(I used olive oil)</span>, cook onion and garlic until tender. Stir in the broth, tomatoes, beans, tomato sauce, tomato paste, chilies and seasonings. Shred chicken with two forks; add to soup. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes. <br />

Meanwhile, place tortilla strips on an ungreased baking sheet. Bake at 350° for 12-15 minutes or until crisp. Serve with soup. Yield: 8 servings (3 quarts).<br />
