Cheeseburger Rollups


I got this recipe from another mom who said her kid loves this, so I thought I'd give it a try and Aidan and Cary really liked it. The thing that's nice about these is that you can add or subtract whatever ingredients you want. (i.e. add some spinach or leave out the onion) I left out the onion this time since I'm eating bland for Ella. :)

Cheeseburger Rollups

1 lb Ground Beef
1 pkg Pizza dough
1 chopped Onion
1 c Shredded Cheese

Brown the meat and season it how you want, add the chopped onion
Put the pizza dough on a half cookie sheet ( I probably rolled this one too thin)
Top the dough with the meat and cheese
roll up and bake at 400 for 20-25 minutes
We dipped in pasta sauce

Peanut Butter Banana Bread

I got this recipe from Dinner's On Me blog.

Peanut Butter Banana Bread

1/3 c Butter
4 T smooth peanut butter (I used Crunchy!)
3 large or 4 small ripe bananas, mashed
3/4 c Sugar
1/4 c Brown Sugar
1 Egg, beaten
1 t Vanilla
1 1/2 c Flour
1 t Baking Soda
1/8 t Salt

Bake at 350 for an hour or until the toothpick comes out clean


Mix all the "wet" ingredients
Add Salt, Soda, and Flour, mix well, but don't over mix.
I made muffins since they have a shorter cook time and that's a good thing around here when it's this hot outside!
Bake for an hour for one loaf of bread, or 20-25 minutes for 12 muffins

Crockpot Chicken Stuffing



Crockpot Chicken Stuffing


4 Chicken Breasts
1 box Chicken Stuffing Mix
1 can Cream of Chicken (or Mushroom)
1/2 c Water
1/2 c Chicken Broth

Place frozen Chicken on the bottom
Mix Stuffing mix, Water, Cream of Chicken, and Broth together in bowl and pour over chicken
Cook for 8 hours in crockpot
I thought the flavor was really good, but 8 hours was WAY too long in my crockpot so I either need to turn it even lower or not cook as long. As you can see the sides of the crockpot were nice and cooked and the chicken got kind of dry.

Banana Crumb Muffins

We buy a lot of bananas and so I usually have some that go bad and I just throw them in the freezer until I want to make something with them. Since I haven't been baking or cooking for awhile I have lots of bananas that I need to use so I've been looking at banana recipes. This recipe is from http://www.allrecipes.com/.

Banana Crumb Muffins


Batter:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted

Topping:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Quick & Easy Stove Top Chicken


This recipe is from the Put a Lyd on It blog. Very Good!

Quick & Easy Stove Top Chicken

3-4 Chicken Breasts, cut into strips (I'll probably just cut into pieces next time)
1 can Cream of Chicken
1/2 tub Sour Cream (she doesn't say how big of a tub, and I'm pretty sure I used too much)
1 box Stove Top dressing, prepared
Mix the Sour Cream and Cream of Chicken Soup
You can put the Chicken down first and pour the mixture over the top

Sprinkle dressing over the top
Cook at 325 for an hour. (Mine was done in 45 minutes)

Chili Mac & Cheese


Ok, most people might find this recipe disgusting. LOL. I got it from a male college student who said this meal is filling, cheap, and provides a couple of meals for the week. I was intrigued so I had to try it. Kids probably would like this too.

Chili Mac & Cheese

1 pkg Hot Dogs (I just used a couple)
1 pkg Mac & Cheese, prepared
1 can Chili

Cut up Hot Dogs and cook in a skillet, meanwhile be cooking the Mac & Cheese in separate pan
Add can of chili and heat up
Add finished Mac & Cheese
Mix.

Easy Stromboli


This recipe is from Parents magazine and they used turkey but I just used cooked chicken that I had on hand. This was really good, Aidan even liked it and he's getting to be a picky eater in his old age.


Easy Stromboli

1 pkg Pizza Crust

1 c Pasta Sauce, divided

1 lb Turkey breast tenderloins, cut into strips ( I just pulled apart some cooked chicken)

1 (10 oz) pkg Frozen Chopped Spinach, thawed and drained

1/2 cup Shredded Cheese (they used Colby and Monterey Jack blend)

Grated Parmesan Cheese

Milk

Cook turkey and chop up.

Unroll crust onto pan (use parchment paper underneath if you want easier cleanup) and roll it out thinner if you need to. Spoon half of the pasta sauce down the center leaving about 3" on both sides Layer the meat and spinach Sprinkle the shredded cheese over the top Cut 12 strips (don't count mine! I'm no perfectionist) :) and then fold strips over filling and overlap Brush on Milk and then sprinkle with Parmesan Cheese. Bake for 12 minutes (ish) at 400 degrees. Serve with remaining sauce

Lemon Pudding Cake

So I love Lemon stuff and I've been wanting to make this recipe for sometime now. :-) This cake isn't overbearing on the lemon, in fact, I wanted it a little stronger with lemon so I tweaked mine. This recipe is from the Kraft Food and Family magazine, but they call it Warm Winter Lemon Cake.

Lemon Pudding Cake

1 Yellow Cake mix
2 c Cold Milk
1 1/4 c Water (I did 1 c Water, and 1/4 c Lemon Juice)
2 pkgs Lemon Instant Pudding (I've tried it with the cooked stuff too and it worked)
1/3 c Sugar
Powdered Sugar

Mix up your cake mix like it says to on the box and pour batter in a greased 9X13 pan.

In another bowl, mix up the pudding mix, milk, water, and sugar until well blended.

Pour the pudding mix on top of the cake batter. The picture above is what mine looked like after I poured it over the top. Cook for 55-60 minutes at 350 or until toothpick comes out clean.
Sprinkle with powdered sugar
Spoon into serving dishes, and store leftovers in the fridge.

Banana Bread with Oats


I'm back! :-)

I'm not sure where I got this recipe, I just found a piece of paper that I written the recipe down on. Super Easy. I made muffins instead of a loaf, so whatever works for you.

Banana Bread
1 1/4 c Flour
1/2 c. Brown Sugar
1/2 t Salt
1/2 t Soda
1/4 t Baking Powder
3 t Canola Oil
2 Eggs
3 mashed bananas
1 c Oats

Bake at 350
50 minutes for loaf
20-25 minutes for 10 muffins
