Calzones



I needed to use up some of my extra meatballs and pizza dough so I made these calzones.

Calzones

Pizza dough (one crust)
Meatballs
Mozzarella
Parmesan
Italian Seasoning

Bake @ 400 for 20-30 minutes

Marinara Sauce

Diced Tomatoes
Tomato Sauce
Italian Seasoning
Garlic (minced or powder)
Basil
Oregano
Mix all together and simmer for about 10-15 minutes.

Split the dough into 4 parts, and roll out

Put meatballs down, Mozarella, sprinkle some Parmesan cheese and Italian seasoning over the top.

Fold the dough over, brush with olive oil or egg wash. Sprinkle with Parmesan Cheese and Italian Seasoning. Bake at 400 for 20-30 minutes

Pizza Turnovers


This is a Betty Crocker recipe. I thought it looked good, fun, and kid friendly. You'll probably notice that I did things differently from the recipe.

Pizza Turnovers


1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
1/4 cup pizza sauce
1/4 cup finely shredded carrot
24 turkey pepperoni slices
1 tablespoon grated Parmesan cheese
2 slices mozzarella cheese, (1 1/2 ounces), cut in half

Heat oven to 400ºF. Roll pizza crust dough on lightly floured surface into 12-inch square. Cut dough into four 6-inch squares.

Spread 1 tablespoon pizza sauce on each square to within 1/2 inch of edges. Top with carrot, pepperoni and cheeses. Fold each square in half over filling; press edges to seal. Place on ungreased cookie sheet.
3.
Bake 12 to 15 minutes or until light golden brown. Serve warm

Cut the dough with a pizza cutter
Spread the Pizza sauce on, and sprinkle the meat. (Turkey Pepperoni would be really good, but I needed to use up some other meat)
Grated Carrots and I used grated Mozarella instead of sliced. (and I don't have any Parmesan right now so that didn't go on either)
Fold dough over and bake at 400 for 12-15 min
They were really good, but it is pizza afterall!

Cheeseburger Rollups


I got this recipe from another mom who said her kid loves this, so I thought I'd give it a try and Aidan and Cary really liked it. The thing that's nice about these is that you can add or subtract whatever ingredients you want. (i.e. add some spinach or leave out the onion) I left out the onion this time since I'm eating bland for Ella. :)

Cheeseburger Rollups

1 lb Ground Beef
1 pkg Pizza dough
1 chopped Onion
1 c Shredded Cheese

Brown the meat and season it how you want, add the chopped onion
Put the pizza dough on a half cookie sheet ( I probably rolled this one too thin)
Top the dough with the meat and cheese
roll up and bake at 400 for 20-25 minutes
We dipped in pasta sauce

Chili Mac & Cheese


Ok, most people might find this recipe disgusting. LOL. I got it from a male college student who said this meal is filling, cheap, and provides a couple of meals for the week. I was intrigued so I had to try it. Kids probably would like this too.

Chili Mac & Cheese

1 pkg Hot Dogs (I just used a couple)
1 pkg Mac & Cheese, prepared
1 can Chili

Cut up Hot Dogs and cook in a skillet, meanwhile be cooking the Mac & Cheese in separate pan
Add can of chili and heat up
Add finished Mac & Cheese
Mix.

Easy Stromboli


This recipe is from Parents magazine and they used turkey but I just used cooked chicken that I had on hand. This was really good, Aidan even liked it and he's getting to be a picky eater in his old age.


Easy Stromboli

1 pkg Pizza Crust

1 c Pasta Sauce, divided

1 lb Turkey breast tenderloins, cut into strips ( I just pulled apart some cooked chicken)

1 (10 oz) pkg Frozen Chopped Spinach, thawed and drained

1/2 cup Shredded Cheese (they used Colby and Monterey Jack blend)

Grated Parmesan Cheese

Milk

Cook turkey and chop up.

Unroll crust onto pan (use parchment paper underneath if you want easier cleanup) and roll it out thinner if you need to. Spoon half of the pasta sauce down the center leaving about 3" on both sides Layer the meat and spinach Sprinkle the shredded cheese over the top Cut 12 strips (don't count mine! I'm no perfectionist) :) and then fold strips over filling and overlap Brush on Milk and then sprinkle with Parmesan Cheese. Bake for 12 minutes (ish) at 400 degrees. Serve with remaining sauce

Tuna Cakes

This is a recipe from Kraft Foods and I changed it drastically, but you can pick theirs out if mine seems unappealing. :-) I was surprised how much I liked these! So good. Cary and I thought these would be good in a sandwich

Tuna Cakes

2 cans (6 oz. each) light tuna in water, drained, flaked (you can use any kind of fish you want)
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken (I just used Bread Crumbs, Parmesan Cheese, Onion powder, Garlic powder, Pepper, and some Paprika for a kick)
1 cup KRAFT Shredded Mild Cheddar Cheese (I used Extra Sharp)
3/4 cup water 1 carrot, shredded
1/3 cup KRAFT Real Mayo Mayonnaise (I used Ranch Dressing!)
2 Tbsp. CLAUSSEN Sweet Pickle Relish (I chopped up some Dill Pickles since I hate sweet Pickles)

MIX all ingredients. Refrigerate 10 min.

HEAT large nonstick skillet sprayed with cooking spray on medium heat. Use ice cream scoop to add 1/3-cup portions of tuna mixture, in batches, to skillet.

FLATTEN into patties with back of spatula. Cook 6 min. or until golden brown on both sides, carefully turning patties over after 3 min.


Tuna
Add Bread Crumbs
and Spices
Cheese
I added some Parmesan Cheese
Carrots and Ranch Dressing
My Dill Pickle Relish :-)
You definitely want to use a non-stick pan for this, I tried at first to use a different pan and it FAILED.
Just cook each side for about 3 minutes or until brown. So good! You gotta try these.

Easy Cheeseburger Pie

So I'd never had this before but apparently it's a classic that's been around a long time. We all thought it was pretty tasty!

Easy Cheeseburger Pie

1 lb ground beef (I used Turkey Sausage)
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Biscuit mix
1 cup milk
2 eggs
I added Pepper too, but I like pepper on everything.

1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4. Bake about 25 minutes or until knife inserted in center comes out clean.
High Altitude (3500-6500 ft): Bake 30 to 35 minutes.

Meat and Onion
Brown
Put in greased 9" pie dish, put your cheese over the meat.
Whip up the Eggs and Milk
Add the Biscuit mix and stir
Pour that over the Cheese and Meat.
Bake in oven at 400 for 30 minutes or so.

Hot Dog Roll-ups


Here's a very fast kid friendly meal. Although Aidan has decided recently he's not really a fan of hotdogs.

What you need:
-Pie dough or a can of pastry dough
-Hot dogs
-Mustard or ketchup for dipping


I bought the pastry dough and it comes in triangles, so you mush the two together and then I rolled them out because I thought they were plenty thick.

Use a pizza cutter to cut strips of the dough, and roll the hot dogs up like so. (Sorry, didn't get a picture of me doing it)

But it looks like this.
Bake it for about 8-10 minutes (depending on your hotdog) at around 350.
