Garbonzo Bean Meatballs



While watching Biggest Loser the other day, they were talking about making meatballs with ground turkey and mashed garbanzo beans (or chickpeas, same thing) and I was intrigued so I made some. The one thing I wasn't expecting was for the kids to like them, but my very picky eater gobbled down two of them, and Ella liked it too. That's always a nice surprise. ☺

Garbanzo Bean Meatballs

1 lb ground turkey (or beef)
1 can (15oz) garbanzo beans, drained and mashed
Garlic cloves (I used about 3, but I like garlic!)
Onion powder
Salt
Pepper
pinch of red pepper, ground or flakes
Soy sauce, splash
2 eggs
1/2 cup bread crumbs, or instant oats (you may need more if it's looking too runny)

Mix and bake @ 400 for 30 minutes, or until cooked all the way through. (It will depend on the size of your meatballs too) ☺
So, not only is it more healthful, it could be a good way to make your meat go farther as well!

Rancher's Eggs

I got this recipe from our health insurance monthly newsletter.

Rancher's Eggs

6- 6 inch torillas (they used corn, I used flour)
1 can black beans, drained and mashed
1 tsp ground cumin
6 large eggs
1/2 cup cheese, grated
6 T fresh salsa

Preheat oven to 350.
Spray 6  8 oz custard cups with cooking spray and place on cookie sheet.
Warm up tortillas in the microwave for about 25 seconds or until they are warm and pliable.
Gently press into each cup.
Spray the tops with cooking spray
Mix some cumin in the mashed black beans
Spoon bean mixture into the bottom of tortilla cups dividing evenly.
Crack 1 egg into each cup on top of the beans
Place cookie sheet with egg cups into the oven and back for about 25-30 minutes until the egg whites are set and the yolks soft.
Sprinkle each egg with grated cheese and place back in the oven for an additional minute for the cheese to melt.
Remove eggs from oven and run a table knife around the tortillas and remove from custard cup and onto plates.
Top the eggs with fresh salsa and serve immediately.
Serves 6.
