Chocolate Peanut Squares


I got this recipe from Country magazine. It's pretty rich so you better be in the mood for chocolate! :-)

Chocolate Peanut Squares


You'll Need:

1 c Butter
6 squares (1 once each) Semi Sweet Chocolate (or 3/4 c of chocolate chips)
1-1/2 c Graham Cracker Crumbs
1/2 c. Dry Roasted Peanuts, chopped (the recipe said unsalted, but I only had salted so that's what I used
2 pkgs (8 oz) Cream Cheese, softened
1 c Sugar
1 tsp Vanilla extract
9x13" pan


Crust:

3/4 c Butter
1/4 c Chocolate Chips (or 2 squares Chocolate)
1-1/2 c Graham Cracker Crumbs
1/2 c Chopped nuts


Cream Cheese mixture:

2 pkgs of Cream Cheese
1 c Sugar
1 t Vanilla

Top layer:

1/4 c Butter
1/2 c Chocolate Chips (or 4 squares)

Chop up the Nuts and Graham Crackers
Melt the Butter and Chocolate Chips (1st amounts)
Make sure you have a 9x13" pan
Melt the Butter and Chocolate until smooth
Mix with the Chopped Nuts and Graham Cracker Crumbs
Press into bottom of the pan and put in the fridge to set up for 30 minutes
While the crust is in the fridge setting up. Cream together the Cream Cheese, Sugar and Vanilla
Beat until fluffy.
Pour over crust and spread
Melt 2nd amounts of Butter and Chocolate until smooth
Pour over the Cream Cheese mixture and spread

I got impatient and cut it before it was totally set up, but you get the idea. :-)

Valerie's Chili

Very simple recipe, but it's really good.

Valerie's Chili

Two packages of McCormick's Original Chili mix
2 lbs Ground beef
2 cans Red beans (drained)
1 can Dk Red Kiney beans (drained)
1 can Black beans (drained)
2 8oz cans Tomato sauce
1 14.5oz can Petite Diced Tomatoes
Chilli powder
Garlic Salt
1 squirt of Ketchup
(I added an Onion)

Brown and drain your meat. Add some Garlic Salt, Chili Powder, and one packet of Chili seasoning, and I added my chopped Onion.
Tomato Sauce and Diced Tomatoes in the crockpot
Add the beans
Add the other packet of Chili seasoning, and the squirt of ketchup
Add the browned meat
Cook all day in the crockpot.
Done!
See. Easy.

Garlic Oregano Chicken with Feta



Garlic Oregano Chicken with Feta

Chicken
Plain Yogurt
Olive Oil
Oregano
Garlic Powder and/or Minced
Onion Powder (optional)
Salt and Pepper
Feta

I just made two pieces today, but they were huge
Start out with the yogurt
Add a little bit of Olive Oil
I added some minced Garlic, Garlic Powder, Onion Powder, Kosher Salt and Pepper
And then quite a bit of Oregano
Mix it all up
Put your Chicken in a bag (or bowl that can be covered)
Add the Yogurt mixture to the bag of Chicken
Moosh it around so the Chicken is all covered by the marinade. Marinade for as long as you want, whether that be an hour or overnight.
Pour into a pan (You can bake instead if you want)
After it's cooked, I empty out some of the liquid.
Sprinkle the Feta on top
Turn the heat off or down and cover with a lid so the cheese can melt some.

Golden Lemon Bread


I got this recipe out of Taste of Home magazine. So Easy.

Golden Lemon Bread


1/2 c Margarine (shortening)
1 c Sugar
2 Eggs
1-1/2 c Flour
1 t Baking Powder
1/2 t Salt
3/4 c Milk
I added a little Vanilla but the recipe didn't call for it

Glaze:
1/2 Powdered Sugar
2 t grated Lemon Peel
2-3 T Lemon Juice Cream together the Margarine and Sugar Mix in the Eggs I added Vanilla Mix the Flour, Salt, and Baking Powder together
And then alternate adding the Flour mixture to the batter With the Milk

Pour into a greased 8x4" loaf pan and bake at 350 for 50-60 minutes While the loaf is cooking, mix together your glaze Mix the Powdered Sugar, grated Lemon Peel, and Lemon Juice together. When the bread is done, pull it out Immediately pour the glaze over the top of loaf. Wait until thoroughly cooled to take out of pan and slice.
