Lemon Crumb Muffins


Another recipe from Taste of Home magazine but I scaled it down since the original recipe made 40 muffins. If I haven't said it enough already, I LOVE Lemon. :) These muffins hit the spot.

Lemon Crumb Muffins

Batter:
3 c Flour
2 c Sugar
1/2 t Soda
1/2 t Salt
4 Eggs
1 c Sour Cream
1 c Butter
1-2 T Grated Lemon (Lemon Zest)
1 T Lemon Juice

Crumb mixture:
1/2 c Flour
1/2 c Sugar
1 T Butter

Lemon Juice:
1/2 c Sugar
1/3 c Lemon Juice
Mix up the batter, but don't over mix. Pour in muffin tins. This recipe made about 20 muffins.
Crumb mixture
Sprinkle over the top
Bake at 350 for 30-35 min
Mix up the Lemon Juice and Sugar syrup
Pour the syrup over the top of the warm muffins

Squash Casserole


This is a Paula Deen recipe and it's really good!

Squash Casserole

6 cups large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
Salt, Pepper, and Garlic Powder
1 cup grated cheddar cheese
1 cup crushed butter crackers (recommended: Ritz)


Preheat oven to 350 degrees F.
Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.
In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
I just used Squash and I grated it instead of dicing it and then saute'd it
Add Sour Cream, Sauted Onions, Cheese, Salt, Pepper, and Garlic Powder
Put in a casserole dish (or a dish like mine) :)
I didn't measure anything, I just sort of threw things together. Bake

Banana Berry Bread


I got this from the Straight out of the Oven blog.

Banana Berry Bread
2 c Bisquick
3/4 c Quick Cooking Oats (I just used regular)
2/3 c Sugar (optional)
2 c Mashed Bananas
2 Eggs
1/4 c Milk
1 c fresh or frozen Berries (Nuts, Chocolate Chips, whatever you want)

Heat oven to 350. Grease bottom only of loaf pan.
Stir Bisquick, Oats, Sugar, Eggs, Bananas, and Milk in large bowl. Fold in Berries or Nuts.
Pour in pan.
Bake 55-69mins for one pan or 45min for three mini loaves.
Cool 10min then remove to wire rack.

I used Blueberries
and I did muffins instead of loaves

Zucchini Cakes

This is another recipe from Pioneer Womans website although I don't follow it, just get the basic jist and ingredients down.

Zucchini Cakes

Zucchini, grated
Bread Crumbs
Parmesan Cheese
Salt
Pepper
Garlic Powder (and I like Onion Powder too)
Oil for frying

Grate Zucchini and dab with paper towel or cheese cloth to get the water out
Add some Bread Crumbs, Parmesan Cheese, Salt, Pepper, Onion Powder and Garlic Powder.

Add an Egg (or two)
Mix it up and it should look a little like this
I have the oil cooking on a medium heat
Cook till brown and crispy.
I had to hurry and get a picture since we were eating them so fast I almost didn't get a photo of the final product.

Rice and Beans

Maybe this is a staple meal for most people, it sure is for us, especially with homemade salsa. (I'll have to post the salsa recipe someday that I got from my sister)

Rice
Beans
Meat cooked(Roast, Hamburger or Chicken)
Corn
Salsa

We had fresh garden Tomatoes, Peppers and Jalepeno's so I put those in for Cary, but I don't normally. I usually just put Salsa in there.
One can of Black Beans and Corn (I used frozen this time)
1-2 cups cooked rice
Heat it up and serve with cheese quesadillas or wrap in a tortilla with cheese!

Roast Rub

So a couple of years ago I was looking for an herb rub for Prime Rib, and after combining a couple of recipes together I came up with this, but I can't tell you measurements or anything since I just kind of go by smell, feel, and color. :-) Helpful. I know. I've discovered that this is good on most roast, be it prime rib or whatever. If you want it really flavorful, I stabbed my roasts (prime rib) with knives and then put the rub on and then wrapped them in saran wrap and let them marinate for a day or so before cooking.

Roast Rub

Dijon Mustard (Alot)
Beef Boullion (Alot)
Horseradish sauce (not the mayo kind, the REAL thing) (a little)
Worchestershire
Onion Powder (or minced)
Garlic Powder (and if you want minced garlic)
Dried Parsley
Dried Rosemary
Dried Thyme
Pepper
I used it the other day on this sirloin tip roast, but I only had the cubed boullion so I stuck it in the water and not in the rub.
When you have mixed everything together it should feel a lot like a paste mixture and look more greenish-brownish than in this picture. Kind of like, err....nevermind.
Yum.

Salmon Pilaf


I got this recipe from Good Housekeeping, but I had to adapt it a little since I didn't have some of the ingredients.

Salmon Pilaf with Green Onions

1 1/4 cup(s) long-grain white rice (I used Brown Rice)
1 bunch(es) (about 6) green onions (I didn't have green onions so I used onion powder, totally the same thing!)
1 tablespoon(s) olive oil
1 pound(s) skinless salmon fillet, cut into 1-inch chunks (I used leftover that was already cooked)
Pepper
1/4 cup(s) teriyaki sauce (I used Soyaki sauce)


Prepare rice as label directs, without salt. Thinly slice green onions; reserve 2 tablespoons of the dark green slices for garnishing pilaf.
Meanwhile, in 12-inch nonstick skillet, heat oil on medium 1 minute. Add onions and cook 3 minutes, stirring occasionally. Season salmon with 1/8 teaspoon freshly ground black pepper.

Add salmon to skillet and cook 7 to 8 minutes or until opaque throughout, stirring occasionally. Remove skillet from heat; spoon off and discard any fat, but leave salmon in skillet.

Stir cooked rice and teriyaki sauce into skillet with salmon until well blended. To serve, garnish with dark green-onion slices.
Definitely would have been prettier with green onions!
