This is a recipe from Busy Mom's Cookbook blog, I'd heard lots of raves about it and I'm just barely getting around to trying it.
Bourbon Chicken
2 pounds boneless chicken breasts, cut into pieces
1 Tbsp. cornstarch
1-2 Tbsp. olive oil
1 garlic clove, crushed
1/4 tsp. ginger
3/4 tsp. crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 Tbsp. ketchup or chili sauce
1 Tbsp. cider vinegar
1/2 cup water
1/3 cup soy sauce
Put all in crockpot and cook on low 8 hours. Serve over rice. (I did it over the stove instead of in a crockpot)
