Rancher's Eggs

I got this recipe from our health insurance monthly newsletter.

Rancher's Eggs

6- 6 inch torillas (they used corn, I used flour)
1 can black beans, drained and mashed
1 tsp ground cumin
6 large eggs
1/2 cup cheese, grated
6 T fresh salsa

Preheat oven to 350.
Spray 6  8 oz custard cups with cooking spray and place on cookie sheet.
Warm up tortillas in the microwave for about 25 seconds or until they are warm and pliable.
Gently press into each cup.
Spray the tops with cooking spray
Mix some cumin in the mashed black beans
Spoon bean mixture into the bottom of tortilla cups dividing evenly.
Crack 1 egg into each cup on top of the beans
Place cookie sheet with egg cups into the oven and back for about 25-30 minutes until the egg whites are set and the yolks soft.
Sprinkle each egg with grated cheese and place back in the oven for an additional minute for the cheese to melt.
Remove eggs from oven and run a table knife around the tortillas and remove from custard cup and onto plates.
Top the eggs with fresh salsa and serve immediately.
Serves 6.

Pan Fried Omelettes


I would guess that most people already know how to make omelette's of some kind. I'm not posting this to insult your intelligence, but I told Cary that the nice thing about this blog is that after I have the baby and I'm sure I'll have my moments where I can't/ won't want to cook, I'll tell him what I want and he'll have (somewhat) detailed instructions on how to cook everything. :-) Hee, hee. He doesn't think I'm funny.

Omelette's

Eggs
Milk
Meat (our favorites are Beef Summer Sausage, or Turkey Bacon)
Cheese (grated or sliced)
Onions, chopped
Tomatoes, chopped
Green Peppers, chopped
Jalepeno's, chopped
Cook the meat
Obviously whatever vegetables you want to use are optional. I chopped up some Green Pepper
and Onion, and I would have done Tomatoes but we didn't have any on hand, and I did a tiny amount of Jalepenos.
Crack some eggs, mix a little Milk in there, Salt & Pepper and whisk together. I used 6 eggs and about 1/2 c Milk.
You want to make sure everything is ready to go before you start the cooking.
Pour some Eggs down on a hot pan. (You don't want the temp too high, but you don't want it too low either, around medium is usually good)
If you want, after a minute flip it over to the other side before adding the other stuff.

Or just start adding things on the not cooked side depending on how squeamish you are.
You really only have to worry about putting stuff down on one side since you'll be folding it over in half.
Cary's omelette has everything, Aidan and mine are just Meat and Cheese. :-)
After you put everything you want on there, fold one half over on top of the other.
Cook both sides
Serve with Salsa, Ketchup, or nothing....

Breakfast Cups


So I tried these and thought they were pretty good, they are very easy, and of course you don't just have to make them for breakfast. I'm a fan of breakfast for supper. :-)

Need:
-Sliced deli roast beef or turkey (or ham if you eat that)
-Eggs
-Cheese

Really you need a muffin tin, but I don't own one of those yet. (I know!) Spray the muffin pan and put the meat slices in like so. (I used the stand alone muffin tins)

Crack an egg into each cup and sprinkle with pepper. (you don't need salt)

Slice or grate cheese over the top.

Bake at 350 for 10-15 minutes (depending on how cooked you like your eggs)



Voila!




If the black edges bother you, you can cut them off with food scissors. :-)
