Parmesan-Roasted Broccoli

This is an Ina Garten recipe, and I didn't follow it totally since I didn't have all the ingredients and I made a lot less, but it was really good anyway. I also used frozen broccoli, just note that it won't be as crispy as it would be if you use raw broccoli.

Parmesan - Roasted Broccoli

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Directions

Preheat the oven to 425 degrees F.

Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

Italian Cheese Bread


Pioneer Woman did something really similar to this, but this is my version.

Italian Cheese Bread

One loaf of French Bread
Olive Oil
Minced Garlic
1/2 c Mayo
1/2 c Parmesan Cheese
Italian Seasoning
Grated Cheese ( I used a cheddar, and mozzarella)

Oven on at 425

Mix Olive oil and minced garlic together.

Cut your loaf in half and then halve the halves. :o) Confused already? Then spread Olive Oil and minced Garlic over the bread and toast in the oven for a few minutes.

Pull the bread out and mix the mayo, parmesan cheese, and sprinkle in some italian seasoning. Spread over the top of the bread.

Sprinkle on some grated cheese and put in oven for a few more minutes until cheese is melted.

Chicken Fingers



I never make these the same way everytime. My favorite combo is to add ranch dressing mix and parmesan cheese to the mix, but this is just a regular recipe.

Chicken Fingers

Boneless skinless chicken breasts cut into strips
Bread crumbs
Flaxseed, ground (optional)
Salt
Pepper
Ground Red Pepper
Dry Mustard
Onion Powder
Garlic Powder

Egg
Milk
Flour

Mix your breadcrumbs, flaxseed, and spices together in a bowl

In another bowl mix an egg and some milk together, toss your chicken strips with flour

Dip the chicken strips into the egg/ milk mixture

then coat in the bread crumb mixture

Fry in some oil, or bake in the oven around 375 for about 15-20 minutes. Serve with your favorite dipping sauce such as BBQ, Ketchup, or Ranch dressing.

Soy and Ginger Salmon w/ Lentils and Bacon



This recipe is adapted from Food & Wine. They just had a plain roasted salmon over the lentils, but in order for me to eat (and like) salmon, I have to cover up the fish taste a little. :-)

Soy and Ginger Salmon

1/2 cup low-sodium soy sauce
2 tablespoons honey
1 clove garlic, finely chopped
1 teaspoon grated fresh ginger
1/4 teaspoon red pepper flakes (optional) I used ground red pepper
4 6-ounce salmon fillets
 
Mix everything together and marinate for atleast 30 minutes. I pan fried.

Lentils

4 strips turkey bacon, cut crosswise into 1/2-inch pieces
1 small onion, cut into 1/2-inch slices
1 carrot, cut into 1/2-inch slices
1 rib celery, cut into 1/2-inch slices
1 clove garlic, minced
1 1/4 cups lentils
2 1/4 cups canned low-sodium chicken broth or homemade stock
1/2 cup canned crushed tomatoes in thick puree
1 teaspoon salt
1/4 teaspoon dried thyme
1 bay leaf
1/4 teaspoon fresh-ground black pepper
 
1. In a medium saucepan, cook the bacon until browned. Pour off and reserve all but 2 tablespoons of the fat from the pan. Add the onion, carrot, celery, and garlic. Cook over moderate heat, stirring frequently, until golden, about 5 minutes.


2. Add the lentils, broth, tomatoes, 1/2 teaspoon of the salt, the thyme, and bay leaf. Bring to a boil, reduce the heat, and simmer, covered, until the lentils are just tender, about 30 minutes. Discard the bay leaf and stir in 1/8 teaspoon of the pepper.

Chicken Noodle Company Casserole


This recipe is adapted from a recipe that was posted on one of my message boards.

Chicken Noodle Company Casserole

2-3 c Noodles or Pasta, cooked (I used whole wheat penne)
1 can Cream of Chicken
1 can Tuna, (or 2 cups cooked, diced Turkey or Chicken)
1/2 c Mayo
1 c grated Cheese
1-2 c. Breadcrumbs, seasoned (or make your own seasoned bread crumbs)
1-2 T Olive oil or melted Butter

350-375 until bubbly

Mix together the Cream of Chicken, Mayo, and Meat


Add the grated cheese, and then mix with your noodles and put in baking dish

Season your breadcrumbs with onion powder, garlic salt, italian seasoning, parsley, and then add about 1 T of Olive oil or melted butter and mix

The bread crumbs should look about like this.

Sprinkle over the top of noodle mixture and bake until bubbly

Potato Casserole

Another one of those recipes that everyone else but me seems to know about and it's nice that you can do lots of different things to change it up. ( I know my aunt throws chopped onions in there too) You can also make this in a crockpot. (so I hear)
Potato Casserole
1 bag Frozen Hashbrowns
1 can Cream of Chicken
2 cups grated Cheese
1 cup Sour Cream
Bake at 350 for 25-30 minutes
Potatoes, Sour Cream, Cream of Chicken
Mixed together with everything, but I saved out some of the grated cheese for the top, and I put some Feta in the mixture.
Sprinkled the remaining grated cheese on top and baked

Mine could have been cooked longer but my husband and child were getting rather impatient. :)

Black Bean and Zucchini Pancakes


This recipe is adapted from a recipe I got from one of my message boards. It ended being very similar to the Zucchini Cakes I posted earlier. I changed things since the original recipe wasn't holding together very well while cooking and I didn't think it was very flavorful.

1 15-oz can of whole black beans
2-3 Eggs
1 tsp garlic, chopped
1 tsp ground cumin
1 medium zucchini, shredded and pat dry
1-2 cups dried italian bread crumbs
Salt
Pepper
Onion Powder
2 tsp oil (I use peanut) for frying (I used more oil)

top with salsa, tomato sauce or shredded cheese

1.Heat a large skillet to medium heat and add oil.

2. Combine all of the ingredients except the topping of choice.

3. Form patties and cook 4 minutes per side or until golden brown and crisp.

Zucchini Bake


This recipe is from Gina's Weight Watcher Recipes I tweaked it a little but I'll just post what is on her blog.

Zucchini Bake

4 cups grated zucchini
1 cup bisquick
1 small onion, grated
3 egg whites, 1 egg (I just used 3 eggs)
1/4 cup olive oil
1/4 cup grated parmesan cheese
1 tsp salt
1 tsp parsley
(I added Pepper, Garlic Powder)

Preheat oven to 350°.

Use a pie dish or casserole (9x12)
Spray your dish
Mix everything together and pour into pan
Bake at 350 for 45 minutes or until golden brown. Mine could have cooked a little longer. :)

Squash Casserole


This is a Paula Deen recipe and it's really good!

Squash Casserole

6 cups large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
Salt, Pepper, and Garlic Powder
1 cup grated cheddar cheese
1 cup crushed butter crackers (recommended: Ritz)


Preheat oven to 350 degrees F.
Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.
In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
I just used Squash and I grated it instead of dicing it and then saute'd it
Add Sour Cream, Sauted Onions, Cheese, Salt, Pepper, and Garlic Powder
Put in a casserole dish (or a dish like mine) :)
I didn't measure anything, I just sort of threw things together. Bake

Zucchini Cakes

This is another recipe from Pioneer Womans website although I don't follow it, just get the basic jist and ingredients down.

Zucchini Cakes

Zucchini, grated
Bread Crumbs
Parmesan Cheese
Salt
Pepper
Garlic Powder (and I like Onion Powder too)
Oil for frying

Grate Zucchini and dab with paper towel or cheese cloth to get the water out
Add some Bread Crumbs, Parmesan Cheese, Salt, Pepper, Onion Powder and Garlic Powder.

Add an Egg (or two)
Mix it up and it should look a little like this
I have the oil cooking on a medium heat
Cook till brown and crispy.
I had to hurry and get a picture since we were eating them so fast I almost didn't get a photo of the final product.
