Flaxseed Smoothie

This recipe was in Guideposts. The smoothie is supposed to help lower your cholesterol since it has fruit and flaxseed in there. :-) I'll post the original recipe, but I used Blueberries instead of Strawberries, and I'm sure you could use whatever kind of juice you wanted too and it would taste good.
Flaxseed Smoothie
1 c Frozen Strawberries
1 Banana
2 c Ice Cubes
1/4 c ground Flaxseed
Welch's Strawberry Breeze Juice
Put everything in a blender
Pour in juice until blender is full. Blend.
 Yum!

Apple Tart


This is from kraft foods. I used to make it quite a bit a couple of years ago. Its so easy and good.

Free-Form Harvest Apple Tart

1-1/2 cups flour
1/2 cup butter, softened
1 pkg. (8 oz.) Cream Cheese, divided
1 pkg. (4-serving size) Lemon Flavor Gelatin, divided
2 medium apples, cored and thinly sliced
1 tsp. cornstarch
1/2 tsp. ground cinnamon
1/3 cup Sliced Almonds (optional)

Bake at 400 for 30-35 minutes
Place flour, butter and half of the cream cheese in food processor; cover. Process, using pulsing action, until mixture is well blended and almost forms a ball. Shape dough into ball; wrap tightly with plastic wrap. Refrigerate 1 hour or until chilled. (or just use regular pie dough) :-)You may want to use parchment paper on the pan for easier cleanup. Roll out on a 11x14" pan.
Mix remaining cream cheese and half of the dry gelatin mix until well blended. Spread onto pastry to within 2 inches of edge.

TOSS apples with the remaining dry gelatin mix, the cornstarch and cinnamon. Spoon evenly over cream cheese filling.

Fold edge of pastry over apples toward center of tart. (Apples in center of tart will remain exposed.)
Sprinkle top with almonds. Bake, in lower third of oven, 35 min. or until crust is golden brown and apples are tender. Cool. Store leftover tart in refrigerator.
Yes, mine is a litte *done*. Oops, but it still tastes good!

Lemon Crumb Muffins


Another recipe from Taste of Home magazine but I scaled it down since the original recipe made 40 muffins. If I haven't said it enough already, I LOVE Lemon. :) These muffins hit the spot.

Lemon Crumb Muffins

Batter:
3 c Flour
2 c Sugar
1/2 t Soda
1/2 t Salt
4 Eggs
1 c Sour Cream
1 c Butter
1-2 T Grated Lemon (Lemon Zest)
1 T Lemon Juice

Crumb mixture:
1/2 c Flour
1/2 c Sugar
1 T Butter

Lemon Juice:
1/2 c Sugar
1/3 c Lemon Juice
Mix up the batter, but don't over mix. Pour in muffin tins. This recipe made about 20 muffins.
Crumb mixture
Sprinkle over the top
Bake at 350 for 30-35 min
Mix up the Lemon Juice and Sugar syrup
Pour the syrup over the top of the warm muffins

Banana Berry Bread


I got this from the Straight out of the Oven blog.

Banana Berry Bread
2 c Bisquick
3/4 c Quick Cooking Oats (I just used regular)
2/3 c Sugar (optional)
2 c Mashed Bananas
2 Eggs
1/4 c Milk
1 c fresh or frozen Berries (Nuts, Chocolate Chips, whatever you want)

Heat oven to 350. Grease bottom only of loaf pan.
Stir Bisquick, Oats, Sugar, Eggs, Bananas, and Milk in large bowl. Fold in Berries or Nuts.
Pour in pan.
Bake 55-69mins for one pan or 45min for three mini loaves.
Cool 10min then remove to wire rack.

I used Blueberries
and I did muffins instead of loaves

Peach Crunch Cake

Sydney told me about this recipe while we were at our playgroup and I just had to try it.
The recipe is on the back of this can.

Peach Crunch Cake

21 oz can Peach filling
1 box Yellow Cake Mix
3/4 c Chopped Pecans
1/2 c Toffee Bits
1/2 c Butter, cut in small pieces

Oven at 350
Pour Peaches on the bottom of a 8 X 8" pan. Spread cake mix on top and swirl with a knife until cake mix is moistened.
Sprinkle the Pecans and Toffee bits over the top and then drop the pieces of Butter on top. Cook for 45 minutes, cool for an hour.
Serve with ice cream. :-)

Banana Bread with Oats


I'm back! :-)

I'm not sure where I got this recipe, I just found a piece of paper that I written the recipe down on. Super Easy. I made muffins instead of a loaf, so whatever works for you.

Banana Bread
1 1/4 c Flour
1/2 c. Brown Sugar
1/2 t Salt
1/2 t Soda
1/4 t Baking Powder
3 t Canola Oil
2 Eggs
3 mashed bananas
1 c Oats

Bake at 350
50 minutes for loaf
20-25 minutes for 10 muffins

Layered Strawberry Cheesecake Bowl


I got this recipe from the Food and Family magazine, and here is the original recipe.

Layered Strawberry Cheesecake Bowl

3 cups sliced fresh Strawberries
3 Tbsp. sugar
2 pkg. (8 oz. each) Cream Cheese, softened
1-1/2 cups cold milk
1 pkg. (3.4 oz.) Vanilla Flavor Instant Pudding
2 cups thawed Whipped Topping, divided
2 cups frozen pound cake cubes (1 inch) (I used Angel food cake, and I didn't freeze it)
1 square Semi-Sweet Chocolate
Mix the Sugar and Strawberries and set back in fridge
Beat the Cream Cheese, add Milk and Pudding mix, the original recipe has you add 1-1/2 c of Whipped Topping, but unless you plan on eating within a day I wouldn't mix it in there. If it sits for very long the flavor goes bad. I left it out.
Put about half of the pudding mixture on bottom of bowl
Then add your pound cake, or in my case I tore up some pieces of Angel food cake
Layer the Strawberries on next
And then add the rest of the pudding mixture
You're supposed to melt some chocolate and drizzle it over the top. I tried to cheat and use hot fudge topping and it didn't work out so much. :-)
Top with whipped topping!

Applesauce Cookies


You usually either love these or hate them. I hadn't tried this particular recipe before, it was one of my Grandma's. Her recipe is actually for Apricot puree, but I used Applesauce.

Applesauce Cookies

1 c Margarine
2 c Sugar
2 Eggs
4 c Flour
1 t Cloves (ground)
1 t Cinnamon
1 t Nutmeg (I didn't put this in)
2 t Baking Soda
1 c Chocolate Chips (I put like 2 - 2.5 cups in)
2 c Applesauce or Apricot Puree
1/2 t Salt

Dissovle Soda in the puree or applesauce, mix all ingredients and bake at 350 for 10-12 minutes.

Margarine and Sugar
Beat and add the Eggs
Soda dissolving in the Applesauce
After everything is mixed together except Chocolate Chips
These will spread and look like pancakes, since I used Applesauce I probably should have put more Flour in.
Add Chocolate Chips, spoon out drops on pans and bake at 350 for 10-12 minutes.
They still taste really good though. ;)
