Rice Chicken Casserole


Just a good dish for getting rid of leftovers. :-)

Rice Chicken Casserole

Chicken, cooked and cubed (or shredded)
Rice, cooked  (I used brown rice)
Vegetables, cooked or frozen
Cream of Chicken
Cheese, grated

I spiced it up with Paprika and Cayenne pepper and Onion Powder.


Mix the chicken

Rice and Vegetables

Add Spices, Cream of Chicken and one can of water (if needed). I also threw in some flaxseed. :-) Bake at 350 until bubbly, about 25-30 minutes

Put the cheese on top and back in oven long enough to melt the cheese.

Potato Casserole

Another one of those recipes that everyone else but me seems to know about and it's nice that you can do lots of different things to change it up. ( I know my aunt throws chopped onions in there too) You can also make this in a crockpot. (so I hear)
Potato Casserole
1 bag Frozen Hashbrowns
1 can Cream of Chicken
2 cups grated Cheese
1 cup Sour Cream
Bake at 350 for 25-30 minutes
Potatoes, Sour Cream, Cream of Chicken
Mixed together with everything, but I saved out some of the grated cheese for the top, and I put some Feta in the mixture.
Sprinkled the remaining grated cheese on top and baked

Mine could have been cooked longer but my husband and child were getting rather impatient. :)

Zucchini Bake


This recipe is from Gina's Weight Watcher Recipes I tweaked it a little but I'll just post what is on her blog.

Zucchini Bake

4 cups grated zucchini
1 cup bisquick
1 small onion, grated
3 egg whites, 1 egg (I just used 3 eggs)
1/4 cup olive oil
1/4 cup grated parmesan cheese
1 tsp salt
1 tsp parsley
(I added Pepper, Garlic Powder)

Preheat oven to 350°.

Use a pie dish or casserole (9x12)
Spray your dish
Mix everything together and pour into pan
Bake at 350 for 45 minutes or until golden brown. Mine could have cooked a little longer. :)

Zucchini Casserole


Melanie has been giving me produce from her garden. A lot of tomatoes and Zucchini so I've been looking for new dishes. I got the idea for this on my "Mom message board" and just played around with it. I was pleasantly surprised how much I liked it, Aidan loved it too.

Zucchini Casserole

1/2-1 lb Ground Beef
1-2 Tomatoes, diced
1 medium-ish Zucchini, sliced (I could have used more when I made it)
Parmesan Cheese
Mozzarella Cheese
Garlic Salt
Pepper
Onion Powder (or it would probably just be really good if you dice up an Onion)

Brown the meat, season with Salt, Pepper, Garlic and Onion
Add Tomatoes and Zucchini, cover with a lid and cook it down (you could add the Zucchini later if you like it more raw)
Sprinkle some Parmesan Cheese
Then some Mozzarella, cover and let the Cheese melt.

Squash Casserole


This is a Paula Deen recipe and it's really good!

Squash Casserole

6 cups large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
Salt, Pepper, and Garlic Powder
1 cup grated cheddar cheese
1 cup crushed butter crackers (recommended: Ritz)


Preheat oven to 350 degrees F.
Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.
In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.
I just used Squash and I grated it instead of dicing it and then saute'd it
Add Sour Cream, Sauted Onions, Cheese, Salt, Pepper, and Garlic Powder
Put in a casserole dish (or a dish like mine) :)
I didn't measure anything, I just sort of threw things together. Bake

Quick & Easy Stove Top Chicken


This recipe is from the Put a Lyd on It blog. Very Good!

Quick & Easy Stove Top Chicken

3-4 Chicken Breasts, cut into strips (I'll probably just cut into pieces next time)
1 can Cream of Chicken
1/2 tub Sour Cream (she doesn't say how big of a tub, and I'm pretty sure I used too much)
1 box Stove Top dressing, prepared
Mix the Sour Cream and Cream of Chicken Soup
You can put the Chicken down first and pour the mixture over the top

Sprinkle dressing over the top
Cook at 325 for an hour. (Mine was done in 45 minutes)

Mock Lasagna


My cousin Rosaleen used to make this all the time, but back then we called it roadkill. At some point I renamed since roadkill tends to turn people off. :)

Mock Lasagna

1 lb Ground Beef
1-1 1/2 c Noodles (We usually use Rotini)
Cottage Cheese (about a cup)
1 can Tomato Sauce (Tomato paste if you like)
Mozarella cheese (sliced or grated)
Parmesan Cheese
Get the noodles cooking and brown the meat. I season the meat with salt, pepper, onion powder, garlic powder, and some oregano.
Mix the noodles, browned meat, and tomato sauce
Throw in some cottage cheese
(Excuse my out of focus photo) Mix in cottage cheese and then you could either leave in the skillet with a lid over the top, or transfer to a casserole dish, put some Mozarella over the top and sprinkle on Parmesan Cheese and let melt.

Crunchy Beef Bake



Crunchy Beef Bake

1 lb Ground Beef
1 diced Green Pepper
1 can Petite Diced Tomatoes
1 can Cream of " " (I used Chicken, but Mushroom or Celery work too)
2 cups cooked Rotini pasta (I used egg noodles since I had some in the fridge that needed to be used)
1 large can French Fried Onions (divided)
1 c grated Cheese

Brown and drain your hamburger
I drained mine after I added the Tomatoes and Green Peppers
I cooked the Tomatoes and Green Peppers for a minute, but I don't think you have to do that.
Add the Cream of Chicken soup
The Noodles
Shredded Cheese
Half of the French Fried Onions, mix it all up and put in a casserole dish
Spread the rest of the FFO over the top of the mixture and bake at 350 until bubbly

Tuna Noodle Casserole


One version of Tuna Noodle Casserole.

Tuna Noodle Casserole

2.5 - 3 c Cooked Noodles (Eggs noodles preferably)
1 Onion (chopped) I puree
2 stalks Celery (chopped) I puree
2 cans Tuna (around 5-6 oz)
1 can Cream of Celery (if the thought grosses you out you could replace it with cr of chicken)
1 can Cream of Chicken
Peas and/or Carrots (chopped)
2-1/2 c grated Cheese
Potato Chips
Cook your noodles, chop or puree Onion and Celery cook in a pan and I added some Pepper
You can start mixing the other ingredients. I added the Tuna to the Noodles
Then some frozen Peas
Add the Onions and Celery
Add about 1-1/2 c grated Cheese
Add the cream of soups and if you still want it thinner you could add some Milk
Put in baking dish (this is an 8x8) and bake at 350 until bubbly
Sprinkle remaining Cheese over the top
Crush some Potato Chips over the top and put back in oven long enough to melt the Cheese
