Easy Garlic-Cheese Biscuits

From Betty Crocker cookbook. I needed something QUICK to make with some chili, so I gave these a try and ended up loving them, and next time I'd actually follow the directions and make them smaller.

Easy Garlic-Cheese Biscuits

2 c Bisquick
2/3 c Milk
1/2 shredded Cheddar Cheese
1/4 Butter (I used Olive Oil)
1/4 t Garlic Powder (I added some garlic salt too)

Mix for 30 seconds, drop onto a cookie sheet, bake for 8-10 minutes at 450
Mix everything in a bowl and stir for 30 seconds
Drop onto an ungreased cookie sheet. Oops. This size works, but you might like them better smaller.
Bake at 450 for 8-10 minutes.

Italian Cheese Bread


Pioneer Woman did something really similar to this, but this is my version.

Italian Cheese Bread

One loaf of French Bread
Olive Oil
Minced Garlic
1/2 c Mayo
1/2 c Parmesan Cheese
Italian Seasoning
Grated Cheese ( I used a cheddar, and mozzarella)

Oven on at 425

Mix Olive oil and minced garlic together.

Cut your loaf in half and then halve the halves. :o) Confused already? Then spread Olive Oil and minced Garlic over the bread and toast in the oven for a few minutes.

Pull the bread out and mix the mayo, parmesan cheese, and sprinkle in some italian seasoning. Spread over the top of the bread.

Sprinkle on some grated cheese and put in oven for a few more minutes until cheese is melted.

Breadsticks

This is Julie's recipe for pizza dough and we ended up using to make breadsticks. It works great either way!

Pizza Dough/ Breadsticks
2 crusts

1 T Yeast
2 c Warm Water
3 T Cornmeal
1 T Olive Oil
1 T Parmesan Cheese
1/2 Granulated Garlic (or Garlic Powder, or Garlic Salt)
1 t Salt
Flour

Mix all ingredients in a bowl and let sit for about 5 minutes (I forgot to get cornmeal, so mine doesn't have that)
Start adding the flour
Add Flour until you have a soft dough, knead about 5-10 minutes. Let raise until double. I'll just go ahead and add that I'm horrible about letting it raise the amount of time it needs too.
Spread some olive oil on a pan with basting brush
Split the dough in half and form a ball (you can put the other half in the fridge to use later, or make a pizza with it.) ;-)
Roll out on a pan and then cut with pizza cutter
Mix some olive oil (or melted butter), parmesan, and garlic salt (parsley optional) in a bowl
Spread over the top of dough with a brush and then let rise for about 10-15 minutes. (I didn't have time and you can tell in my pictures. Hee.) They still taste good though.
Bake at 375 for about 15 minutes or until golden brownish, pull out and spread more olive oil, parmesan, garlic salt on top of warm breadsticks.

Salsa - The Lazy Way



I got this recipe from my sister and last fall I would make double batches of this stuff and we were eating it like crazy up until I got morning sickness, and then anytime anyone even mentioned the word "salsa" it would send me into gagging, dry heaving fits. I was finally ready to make this and eat it again, this week.

Salsa

1 can Rotel Tomatoes with Chiles (or Peppers)
1 can Rotel Tomatoes/ Lime and Cilantro
1 little can of Tomato Sauce (the tomato sauce with Basil, Oregano and Garlic is good!)
1/2 Onion (yellow or white)
Lime Juice (Juice of 2-3 Limes)
Pinch of Kosher salt
One bunch of Cilantro

If you want it even spicier, you could throw a jalepeno in there. Put the can of tomatoes and chiles with the onion and chop up in the blender. Add everything else and mix in blender to the chunkiness you desire. Cary likes his thick and chunky, I like mine really blended, and since I'm the one making it, I win. :-)


I didn't want to pull my big blender out so I blended everything separately

Then mixed together in a bowl.

Parmesan Knots

Here is another recipe from Taste of Home magazine.

Parmesan Knots


1 tube (12 ounces) refrigerated buttermilk biscuits
1/4 cup canola oil
3 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried parsley flakes

Yield: 2-1/2 dozen.
Cut each biscuit into thirds.
Roll each piece into a 3-in. rope and tie into a knot; tuck ends under. Place 2 in. apart on a greased baking sheet. Bake at 400° for 8-10 minutes or until golden brown. Don't look too closely at my "knots".


In a large bowl, combine the remaining ingredients; add the warm knots and gently toss to coat.

Sour Cream and Beef Cups


This is a recipe adapted from Country magazine, and the original recipe was turnovers but I turned them into cups. :)

Sour Cream and Beef Cups

Dough:
1-1/2 c Flour
pinch Salt
1/2 c Shortening
1/2 c Sour cream

Meat:
1/2-1 lb Ground Beef
Onion, finely chopped (I used Onion powder since I'm trying to minimize the heartburn lately)
1/4 c Mushrooms, chopped (I didn't put this in)
1/4 c Sour Cream
Oregano
Salt and Pepper

Brown the meat with Onion.
Start on your dough by mixing the Flour and Shortening. I just used a fork.
Add Oregano, Salt and Pepper to the meat
Cut into the Flour, Shortening until it looks like this
Add Sour Cream to the meat
Add the Salt and Sour cream to the dough and mix some more. You can add Flour or Water to this depending what will make it easier to work with.
I just rolled the dough into a ball, flattened it, and then pressed it into a muffin pan.
Fill up with the Beef mixture.
Bake at 425 for 10-15 minutes or until slightly browned. Top with Cheese if you want

Stuffed Potatoes

These are kind a different take on Twice Baked Potatoes, except I do them in the microwave since it's so much faster.

Stuffed Potatoes
-Potatoes
-Cream Cheese
-Sour Cream
-Cheddar Cheese
-Salt (or Garlic Salt)
-Pepper
-Parsley

I brushed some olive oil on the potatoes, sprinkle some salt and put them in the microwave on the baked potato setting. (The potatoes were on the small side so they didn't take as long)

Cream Cheese, Sour Cream, and Cheddar Cheese

Slice the potatoes length wise and scoop out the insides into a bowl.

Add the sour cream, cream cheese, cheddar cheese, salt, pepper, etc.....(whatever you want)

I added some milk to this mixture too and put it in the microwave for about another minute and then mixed thoroughly.

Fill the skins and eat!

Hot Dog Roll-ups


Here's a very fast kid friendly meal. Although Aidan has decided recently he's not really a fan of hotdogs.

What you need:
-Pie dough or a can of pastry dough
-Hot dogs
-Mustard or ketchup for dipping


I bought the pastry dough and it comes in triangles, so you mush the two together and then I rolled them out because I thought they were plenty thick.

Use a pizza cutter to cut strips of the dough, and roll the hot dogs up like so. (Sorry, didn't get a picture of me doing it)

But it looks like this.
Bake it for about 8-10 minutes (depending on your hotdog) at around 350.
