Zucchini Cakes

This is another recipe from Pioneer Womans website although I don't follow it, just get the basic jist and ingredients down.

Zucchini Cakes

Zucchini, grated
Bread Crumbs
Parmesan Cheese
Garlic Powder (and I like Onion Powder too)
Oil for frying

Grate Zucchini and dab with paper towel or cheese cloth to get the water out
Add some Bread Crumbs, Parmesan Cheese, Salt, Pepper, Onion Powder and Garlic Powder.

Add an Egg (or two)
Mix it up and it should look a little like this
I have the oil cooking on a medium heat
Cook till brown and crispy.
I had to hurry and get a picture since we were eating them so fast I almost didn't get a photo of the final product.

Last week, Niles brought over a bunch of zucchini from his garden, and Kath didn't want it to go bad so she told me to use it sometime during the week. Anyhow.. I made these zucchini cakes on Friday for lunch... and everyone loved them --- of course. ;-)
